Mood : Chilled out. Because it’s a Sunday and I don’t have to go to work this Monday.
Also because Berta, my maid with whom I’ve had a ten year love-hate relationship, has gone to her village to be back only on Tuesday. This is an annoying-yet-peaceful situation: of course, I’ve to do all the work but I’m spared the kitchen the power struggle and the daily gratitude I must display for her presence in my life.
In any event, I don’t have to cook lunch as we’re going out.
So, the right mood for some light happy food
Food: Happy Mixture. A chivda of a lot of cool crunchy things
1. Unsalted puffed corn – 1/2 cup
2. Puffed rice – 1/2 cup
3. Beaten rice (poha) – 1/4 cup
4. Fried gram – 1/4 cup
5. Peanuts (deskinned) – 1/4 cup
6. Corn flakes – 1/4 cup (I used Honeyloops)
7. Raisins – 2 tblsp
8. Anything else you want to add – cashews, almonds, sesame seeds, even curry leaves!
10. Turmeric powder
11. Chat masala (optional)
12. Oil – 2 to 4 tblsps (depending on your oil guilt factor; I have none so I must have used about 1/4 cup!!)
Take a thick bottomed flat pan (this is unlike me – I’m thick bottomed but hardly flat!)
Drizzle some oil on the pan. Roast each ingredient on a low flame one by one separately. Sprinkle salt as you roast. While using salt remember less is more or you’ll end up with a very salty mixture
On the puffed rice sprinkle turmeric powder as you roast, to take it from anemic to a wonderful golden colour. It can also take some chat masala if you like that taste.
Raisins must really puff up. So wait until they do. Honeyloops are an inspired addition – I take full credit for this!
Never raise the flame more than low. Burnt taste can spoil your happy mixture.
Oil I used organic cold pressed groundnut oil. Salt was pink Himalyan rock salt. Feel very virtuous 😎
Mix them all up in a large plate, allow to cool and store in airtight containers.
Really that’s it. Take about 10 minutes and it’s full of crunchy happiness and goodness 😀
